It is said that chardonnay reaches its height in the region of Burgundy.  From the Macon in the south to Chablis in the north, chardonnay is the grape of great white Burgundy.  In this region, the grape generally produces wines of restraint and elegance which pair well with sophisticated seafood dishes or simply prepared roasted quail or poultry.
